Tuesday night I stopped by Safeway and purchased six chicken breasts for $5.49. I took four of the breasts and rolled them in the rosemary that my friend gave me as a summer solstice gift. I also used sage and thyme that Dante and I picked from our garden. I drizzled the chicken with olive oil and seasoned it with salt and pepper. The remaining two chicken breasts were wrapped up to use later this week.

As the chicken broiled, I warmed up the au gratin potato leftovers from Sunday night's dinner. It was a simple, yet delicious weekday meal.

Because I used the leftover potatoes and ingredients that I already had, the only investment for this particular meal was the chicken. We used four of the six chicken breasts so I calculate this meal cost approximately $3.64.
