A Quick and Inexpensive Dinner

While at Safeway last night, I picked up a few items to cook for dinner including:

* Three pork chops for $3.77
* Three ears of corn for $1.00
* Can of corn at $.79

After putting the groceries away when I got home, I made a batch of homemade corn bread and included the can of corn. The canned corn keeps the corn bread nice and moist. I then stripped the ears of corn and put them to boil for about three minutes. Once they were cooled, I cut the kernels off of the corn because Paul doesn't like eating it off the cob. Also, it is easier to save the leftovers to enjoy later.

I wasn't quite sure what to do with the pork chops with the amount of time I had so I just seasoned them with a little salt and pepper and fried them in olive oil. They were ok, but next time, I'll get a little more creative.

Because we normally work so late at Fearless, I always enjoy it when I can find 30 minutes before 9:00 pm to cook dinner for the family. When I can make that dinner for $5.56 or $1.85 per person, even better!
