The Pleasure of a Low-Key Weekend
Sunday, 07 June 2009
We had a wonderful time this weekend celebrating Paul's birthday. Per his request, a few of our friends came over and they spent the day in the studio playing games. Dante and I spent the day working in the yard, buying groceries and baking Guinness cupcakes. Later in the evening Dante helped me make tacos for everyone.

On Sunday, we continued the birthday celebrations for most of the day. It wasn't until around 5:00 pm that the three of us had a chance to settle down for a small family celebration. Paul grilled steaks. I baked potatoes and we had veggies from the previous taco night. We savored leftover Guinness cupcakes for dessert. They actually tasted better the next day.

It looks like we will be feasting on leftovers for most of the week. I haven't mastered the art of knowing how much to cook for a crowd and I overestimated by about 50%. I may give up and freeze the taco meat to use in a few weeks.

We enjoyed both days immensely. Paul has been traveling or working every weekend since the first week of March. I think his favorite part of the entire weekend was just being at home. It's funny how we start craving simplicity.

* One note about the cupcakes. I used this recipe for the cream cheese frosting instead and liked it much better: http://allrecipes.com/Recipe/Cream-Cheese-Frosting-II-2/Detail.aspx
