Back in October, I cut up a potato that had started to sprout and planted the pieces in a barrel under about one foot of dirt. It didn't take long for the potatoes to start sprouting. I continued adding dirt to the barrel as the potatoes continued to shoot up. Then, I became swamped with seminars and to-dos for both Budget Savvy and Fearless Fitness, completely forgetting about the poor potato barrel.
Last week, I went outside to start planning the backyard we are finally going to put in this May. I was surprised to see the potato barrel had weathered its two month neglect pretty well.
I tipped it over to see if our experiment worked. Approximately 30 small potatoes poured out along with the soil. Not a bad haul for all the neglect.
Last night, we cooked about half of our harvest along with steaks from Costco. Paul and I were shocked at how tender and delicious the potatoes were. I mean shocked! It would have been easy to eat them without butter as they had so much taste on their own.
We have almost always had some sort of vegetable garden, but this is the first time we did potatoes. I plan on starting a new potato barrel next Sunday. I can only imagine how great they are going to taste when I actually give them some love and attention all the way through to harvest.
