We got home much later than expected last night. By the time I walked in the door I was starving and loopy. I didn't have the patience to cook anything from scratch.
As I rummaged through the fridge, I found leftover brown rice from Sunday night. I decided to make a quick, healthy version of fried rice. I diced a little onion and sauteed it in olive oil. I threw the rice in with the onion to warm up. I added some broccoli along with two eggs that I scrambled at the center of the pan and then folded into the rest of the rice once it was cooked. Finally, I added a two tablespoons of Mr. Yoshida's Gourmet Sauce for a bit of sweet flavor. We were eating dinner withing five minutes of dicing the onion.
"Fried" rice is also my go to meal for getting rid of vegetables before they spoil or leftover meat.
